Mil Cumbres, "a thousand peaks," sits from 1500 to nearly 2000 meters in the Panamanian highlands and does things the hard way: no electricity, no chemicals. Without power, the team slow-dries their coffee for up to 50 days in sauna-hot rooms, and everything from clearing jungle to sorting every cherry is done by hand. A wild way to run a farm, and it produces some incredible varietals.
